Hominy and Jalapeno Chicken Soup
2 T EVOO
1 onion chopped
2 jalapeno’s stemmed seeded and sliced
2 cloves garlic minced
1 T chili powder, or to taste
2 quarts chicken broth
1 roast chicken, meat removed
1 can hominy drained, or cooked brown rice
1 bunch of cilantro
1 lime cut into wedges
Saute onion and half the jalapeno and garlic in the EVOO. Mix in the chili powder, add chicken, broth, and hominy or rice. Simmer to blend flavors. Serve with cilantro, jalapenos and sour cream.
Also good with fresh spinach added to soup.
